Roasted Garlic

I always make extra of this recipe and keep it in my fridge.  I add roasted garlic to many of my recipes because of its mild sweet garlic flavour which pairs well with almost everything.  Local Ontario garlic is fantastic and works great in this recipe with its large cloves.  Enjoy!

Ingredients
  • 2 heads of garlic, loose papery layers removed
  • 2 to 3 tablespoons olive oil
Instructions
  1. Heat oven to 400 degrees.
  2. Cut off the top of the the heads of garlic (~1/4 inch) to expose the tops of the cloves.
  3. Drizzle the exposed cloves with the olive oil and wrap in a double layer of aluminum foil.
  4. Place the foil package on a baking sheet and bake for 35 minutes.
