Roasted Chickpeas

Ingredients
  • 1 can chickpeas
  • 2 tablespoons cajun spice mix (or any of your favourite store bought spice mixes)
  • 2 to 3 tablespoons avocado oil (or other oil of your preference)
  • Salt and pepper to taste
Instructions
  1. Heat your oven to 400 degrees.
  2. Drain, rinse and dry the chickpeas using a clean tea towel.
  3. Place the chickpeas in a bowl and toss with the spice mix, salt, pepper and oil.
  4. Place the chickpeas on a cookie sheet lined with parchment paper or a silicon baking mat. Bake in the oven for 25 to 30 minutes giving them a shake half way through.
  5. Let them cool. Eat as a snack or add to your favourite salad or soup.
