Serves: 20 snacks

Ingredients
  • ¾ cup rolled oats
  • ¼ cup wheat germ
  • 1 pinch of sea salt
  • ¾ cup pitted Medjool dates
  • ½ cup peanut butter
  • ¾ cup chocolate chips or good quality chocolate (optional)
Instructions
  1. In a food processor, process the oats, germ and salt until it looks like flour. Add the dates and process for about 30 seconds. Add the peanut butter and blend till everything comes together.
  2. Using a small ice-cream scoop (the one often used for cookies), scoop up some of the mixture and form it into a ball and place it onto a parchment lined sheet. Using a fork, lightly press the balls into cookies and repeat the process at 90 degrees to make a checkered pattern on the cookies.
  3. If you want to make these extra special, chill snacks for 15 to 30 minutes. Meanwhile, melt chocolate in a double boiler and dunk the snacks partially into the chocolate. Place on the parchment lined sheet and cool till chocolate sets. Enjoy!
