Holiday Mojito

December 11, 2015 by Penny Leave a Comment

This recipe takes the summery mojito and transforms it into the perfect holiday cocktail.  The Prosecco which replaces the soda water adds a different tart element to the drink which is delightful. I like to garnish the drink with some fresh or frozen cranberries which with the green mint leaves makes me think of all things Christmas.

This is another recipe inspired by the holiday issue of the Food & Drink magazine.

Ingredients
  • ¼ of one lime
  • 2 sprigs of mint plus more for garnish
  • ½ ounce simple syrup
  • 1 ounce rum
  • 3 to 4 ounces of Prosecco
  • 3 fresh or frozen cranberries
Instructions
  1. In a glass, give the lime a squeeze and dump it in the glass. Add the mint leaves and muddle to release the juices.
  2. Add the simple syrup and rum to the glass. Fill glass with ice and give it a stir. Top with prosecco and add some cranberries and more mint for garnish. Enjoy!
