Oh Popsicle!

These are not your typical Popsicle filled with artificial flavours and weird sugars.  These pops are full of class!

With fresh mint, wild blueberries and an infused simple syrup, these bad boys will be the highlight of your next BBQ.  To really get the party started, you can also add some rum in the mix.  I usually keep mine kid-friendly because I can’t keep my kids away from any frozen treat. However, they are very well trained in recognizing a wine glass as a “mommy-only drink” 🙂

Just as a note, the sweetness of your berries, the size of your mint leaves and the tartness of your limes will impact this recipe. So take a minute, taste the mixture once blended and adjust to your taste! Also, consider changing up the recipe by using different kinds of fruit.  Have fun!

Ingredients
  • 2 cups fresh or frozen wild blueberries
  • ½ cup sugar
  • ½ cup water
  • ½ cup packed mint leaves (about 20 large leaves) and the stems plus another half dozen leaves
  • ⅓ cup lime juice
  • ½ cup soda water or just regular tap water
Instructions
  1. Make the mint simple syrup by combining the ½ cup water and sugar in a sauce pan and heating till the sugar is dissolved. Add 20 mint leaves and the stems and remove from heat and let the syrup sit till cool. Strain the liquid and discard the mint.
  2. Add the strained syrup and all the other ingredients in a blender. Pour in molds. Freeze for 30 min and insert popsicle sticks. Let freeze completely - about 5 hours. Run molds under warm water to remove the ice pops.
