Peas and Mint

My kids love peas and they are often on the menu as a quick side dish. But momma needs more than peas with some butter. So below is a more sophisticated take on my William’s favourite vegetable.

I made this recipe with frozen peas which we always have in our freezer.  However, if peas are in season where you live, pick some up at your local farmers’ market, shell them and cook them in some boiling water for a few minutes and add them to the recipe.

Ingredients
  • 85 grams bacon (about 3 slices), cut into thin strips
  • 2 cups frozen peas, thawed or fresh and cooked peas
  • 2 spring onions, chopped
  • 1 tablespoon mint plus more for serving, chopped
  • ½ cup vegetable or chicken stock
Instructions
  1. In a medium skillet and over medium to low heat, cook the bacon till fat has rendered and bacon is crispy. Remove the bacon with a slotted spoon and place on a plate lined with paper towels. Set aside.
  2. In the same pan and with two tablespoons of the bacon fat (if you don't have enough bacon fat just add some olive oil), add the onions, peas, mint and stock. Cook for a few minutes till liquid is reduced. Season with salt and pepper to taste.
  3. To serve, sprinkle with bacon and some mint. Serve warm.
