Rustic Smashed Potatoes with Leeks

Need a new side dish?  If you like the taste of leek and potato soup, try these rustic smashed potatoes.

I paired a flank steak and chimichurri sauce with these potatoes and it was perfect.  Let me know what you think.

Rustic Smashed Potatoes with Leeks

Ingredients
  • 4 tablespoons butter, divided
  • 2 tablespoons olive oil
  • 4 large yellow flesh potatoes, peeled and cut into quarters
  • 3 leeks, white parts only, sliced
  • 1 teaspoon thyme leaves
  • Salt and pepper to taste
Instructions
  1. In a pot of boiling water, cook the potatoes till fork tender, about 15 to 20 minutes.
  2. While the potatoes cook, heat two tablespoons of butter and the olive oil over medium heat in a large skillet. Add the leeks and cook for a couple of minutes. Add the thyme and salt and pepper and cook till the leeks are soft and start to brown. Set aside.
  3. Once the potatoes are cooked, drain and return to the pot. Over medium heat, cook the potatoes to remove any moisture (about a minute) and roughly mash them with a potato masher - remember to leave some large chunks.
  4. Add the leek mixture, remaining butter and salt and pepper to the potatoes. Mix well and serve warm.
