Tomato Basil Salad

Market fresh tomatoes can’t be beat! They are sweet, flavourful, juicy and loaded with good things for you.  And they are now available at Toronto farmers’ markets.

This recipe puts the tomato in the spotlight. It is simple with few ingredients to let the natural flavour of tomatoes shine. Just be careful when mixing the salad to ensure that the tomatoes don’t just fall apart. Use a gentle touch!

Ingredients
  • 2 to 3 large tomatoes, cut into small wedges
  • ½ small red onion, thinly sliced
  • ¼ cup fresh basil, chopped plus more for garnish
  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon honey
  • Salt and pepper
Instructions
  1. Place the sliced tomatoes, onion and basil in a bowl or serving dish.
  2. Put the olive oil, vinegar and honey in a Mason jar and shake to incorporate.
  3. Pour the vinaigrette over the tomatoes, season with salt and pepper and gently mix. Garnish with basil and serve immediately.
